Any Home Bakers Here?

Personally, I wouldn't use that pie crust recipe. It has too many odd measurements - who uses 9 tablespoons of butter? One stick and be done.
I like the pie crust recipe from the cookbook i got when I moved into my first apartment - Betty Crocker has never let me down.
It worked out very well for me. My other double crust recipes use about that amount of butter.

What I did was put one cube into the first part and then the half a cube into the freezer for the second part (add all the butter at once).

Making this without the food processor would not require the frozen butter part and should work just as well.

This is a food processor recipe and many like to use them for pie dough. It is similar to those that use a bread machine. I do see it as a benefit for those with arthritis or other issues with their hands
