Any Home Bakers Here?

Just made a NEW Recipe: Cookie/Biscotti
One large bowl and a whisk
3 eggs
3/4 cup sugar
2 1/4 tsp yeast
1/2 cup oil (veggie) lemon rind
Chopped Nuts (your choice Almonds, Pecans, Walnuts) 1/2 - 1 cup
4 cups AP Flour (start with less)
Mix all with a whisk (EXCEPT THE FLOUR)...
Then fold in the yeast and the flour....bring together with hands.
Pinch pieces of dough (your choice of size of pinch)
Place on cookie sheet lined with parchment. Bake 350 oven 15 minutes
Please note: I use lemon extract and I would start with 3 1/2 cups flour
and make a SOFT PINCHABLE dough. I made 42 cookiesView attachment 2059079

I would be careful since wild yeast is very unpredictable. I have figured out sourdough fairly well though!
I need to figure an option out. No yeast in any store and very little flour. At least I could get some bread but I'm uncomfortable with the flour/yeast situation.

Ron can mail you Sourdough Starter and you would be all set. It is
easy. He gives you super directions. What do you think? You can
make the sourdough work as yeast. And you can alter the taste to suit
you. I got Ron's starter 2016 September and I have kept it alive and well
and the bread is tasty and much better for you. Good Luck Aria

Don't you need yeast to make sourdough though? I'm looking to make sandwich bread and have a recipe I like. I've never used a starter and need to do some research on them I must confess.
