Any Home Bakers Here?

It depends on how much I use for normal replenishing. For the rehydrating part, I would add a half cup of flour and a bit less of warm water at the first 12 hour mark and stir it up. Do not worry if it is a bit clumpy as it will smooth out as the starter digests the flour. If it is having trouble getting going, I would toss all but half of what is in the jar and then add a cup of flour and 3\4 cups of warm water.

I like a thicker starter so do not use one to one in the starter. I actually adjust the ratio based on how thick the starter is.
Excellent. The thing I don't like about the potato starter is that it was very thin. I'd rather have a thicker one to use. Thanks! Now I'm just waiting for the mail to deliver.

The waiting can be hard!

The one to one ratio is called 100% hydration. I like mine to be closer to 80%. That seems to work better in most recipes here. I figure your place will be similar for low humidity

Makes sense to me too. Thanks a bunch for the tips, I can't wait to get started. Experimenting with the potato starter gave me some confidence that I can work it out.
 
IM, YOU CAN. If I could do it....you can too. Ron's Starter is powerful
and his directions are what makes it work. I was not sure I could make
it work and live well. I got my starter September 2016 and you can see
my Sourdough Bread is always a keeper. Thanks to Ron. You will enjoy
making it part or your home...like a new friend. I would NOT be without
it. My sister says....it is too much for her. I thought the same at first...
NOW I would not bake with out. It is my friend. I thought of naming it..
could not decide on a name...working on it. Any suggestions...any one?

I too feel like my sourdough starter is friend too! It is a real joy and stress reliever to work with and it really does not take that much time.

I will have to think about names

Unless it is different there than here, you are allowed to go out for health and safety reasons. Not dying of starvation falls under the health category :D

I plan to stick with the same "schedule" I have followed since I retired 6 years ago. I go grocery shopping once a week, buy enough for the week. There are a few things bought in "quantity" that aren't used right off, like I'll buy 4 cans of tuna and not buy again for a month. The 9 mega roll of TP is good for a couple of months. Good thing I'm not out, haven't seen ANY on the shelves for a couple of weeks. I couldn't buy a months worth of the cereal DW eats 6 days a week, there are never that many boxes on the shelf.

YES...sounds like the same situation here. We shopped one month ago. And we have been on lockdown. Fortunately we have a full
freezer, stocked pantry shelves and about 20 pounds of flour...a combo
of All purpose, whole wheat and Bread Flour. And in the refrigerator
I do have small amounts of Spelt and Rye Flour. I do LOTS of baking.
All our yeast products and our cookies etc. We do NOT plan to go out
soon. And most of my Breads are Sourdough Whole Wheat, Spelt,
and Bread Flour. Aria

Regarding the sourdough starter foaming: I didn't realize at first that it will foam up then drop back down. It was a while before I happened to look at it maybe an hour after feeding rather than several hours.

You are right. You can go out. Just need to be cautious and keep distance. I was just grateful I stocked up on food. The stores are CRAZY.
