Saw a interesting idea on the news this morning making meatloaf in muffin cups
new twist on old recipe I do it
Meatloaf
1 lb ground beef
2 eggs
2 c bread crumbs
1 1/2 c Ketchup or bar b cue sauce
1 onion chopped
1 bunch fresh cilantro or dried
anything else seasoning I think of

Whole wheat flour has less gluten. if you use straight whole wheat, it will be dense compared to bread flour.

You can add half a cup of vital gluten to the recipe to help too!

Perfect! The trick is to add flour and water every 12 hours. Like was posted earlier, the starter will often rise and fall when you are not watching it! Sneaky stuff sometimes. You can start using is as soon as it rises. The follow the replenishing guide I sent

It is! I can see on the jar that it has risen at some point but it's not right now.
Am I supposed to discard half of the starter before I feed it the second time?

I prefer my mother's method. She mixed up stuffing and used her meatloaf mix to form the meatloaf around the stuffing. She formed them in individual sized portions with a strip of bacon and ketchup on the top and baked them in a large saucepan. She would make gravy from the leavings and serve them with mashed potatoes.

You can do that or you can add half a cup of flour and half a cup of warm water if the jar is tall enough. Then tonight discard half (you could actually make an overnight sponge bread recipe. Lots of them in the recipes I sent) and add one cup of flour and 1 cup of water.

The starter will be ready for the fridge in the morning based on what you described.
