Any Home Bakers Here?

My dad just discovered he has to be gluten free now. My mom has made bread her whole life but when she tried to do gluten free, she said it was very dry. Anyone got any good recipes to share for gluten free bread?
Here's my recipe that works really well in my bread machine.

1 3/8 cup water
1/2 cup powdered milk
-or-
1 3/8 cup milk

warm to 100-110 deg.

Put
1 Tabelspoon sugar
2 teaspoons yeast

in the bread pan, and pour warmed milk over. Let proof for 10 minutes.

Mix in bowl and set aside:

338 grams Namaste brand GF flour
2 T mashed potato flakes
1/2 t salt
1/2 cup old fashioned oats

Beat 3 med-lg sized, room temperature, eggs (you want 2/3 cup) and add to proofed yeast in bread pan.

Pour 1/4 cup olive oil into bread pan, then 1/4 cup honey.

Add the dry ingredients.

I use the "dough" setting to mix, knead, and raise. Then I use the "bake" setting which bakes for 1 hour.

Cool for 30 minutes in the pan, then remove pan and cool completely. The top of the loaf will fall a bit... sigh.

I weigh the flour, but not the rest of the ingredients. This is a small loaf, but it slices well. Though dense, it stays nice and moist. I haven't tried making any GF bread by hand; instead of dough, it's more like a thick banana bread consistency. Namaste brand GF flour is what Costco has, so that's why I use it. I don't want to buy and mix different flours.

The reason I use the dough cycle is because even though the machine says it has a GF cycle, it still beats it down for a second rising. The result was a doughy brick. And a few naughty words.

Question for @ronott1. I brought my starter out of the fridge this morning to bring it to room temp so I could feed it. A few hours later, when I checked on it, I was amazed to see that it had bubbled happily up as if it had been fed. Can I just put it back in the fridge? Or should I go ahead and feed it first? It's never done this before. Thanks.

I would had a quarter of a cup of flour and water each to the jar and keep it out of the fridge for a couple of hours.

Your starter is doing great!
 
I've had mine about 3 or 4 days so far.
Are you in much pain? Mine was a pain that started in my lower back, wrapped around to the front of my left thigh and went down to my ankle. That would have been tolerable if not for the dull knife that was jabbed into my quad with some frequency and twisted back and forth.

That can be a problem, if she buys GF products tell her to stay away from Schar. Might as well powder some rice and glue it back together. One of the few things I've bought that I threw away rather than sucking it up because I paid good money for it. I can understand how they stayed in business where there were few GF alternatives but there are a lot now. No need to settle for a bad product.

DD1 is GF but also sensitive to nightshades. That adds to the problem because the thing that is frequently used in place of wheat in GF products is potato starch.

Sally has been dealing with GF baking for a bit, I'm sure her bread recipe is good. I assume it is possible to make it without a bread machine.
 
Made a german chocolate cake today for hubby's bday. Dang, it came out good!:drool

For baking sourdough bread... I do not have a Dutch oven. I just got a pizza stone; can I use that and cover the loaf with aluminum foil? I don't think I have a pan that is 450-500 degree oven-worthy.

My neighbor goes to a lot of estate sales. She's on the look out for a Dutch oven for me. If she doesn't find one by Christmas, I'll pony up the $$$ and get myself one.
The Lodge cast iron combo cooker is $45 at Target or Cabela's. If you find an actual Dutch oven and don't know if the knob can go up to that temperature (like me), just take the knob off before putting it in (I also put the screw back in the hole to keep more of the steam in).

I made this one last year for a casserole, and tried a slice by itself. I was impressed, very yummy!
