I've decided to try out one of the King Arthur flour recipes I keep hearing mentioned.

So far so good. It was too much to make in my bread maker so I did it in my kitchen aid. The dough has turned out great so far so looking positive. It just doing its first rise now. Oh and this is a dairy free version using butter substitute and almond/cashew milk. Fingers crossed!
Rolls are so good!

I just shaped two French bread loaves and can't wait to get it into the oven.

Might have to try that! Dough is the best I've worked with so far. Nice and stretchy but not sticking to the bench. I can actually do the shaping stuff like in the YouTube videos lol. I've done half rolls and half longer subway looking buns. Can't wait to see if it tastes as good as it's looking!

Might have to try French bread next time. Is it just the shaping or do you do something to make them crusty?

I am using the KAF Extra Tangy sourdough bread. I let it stay a bit wet and I will baking it in the Porcelain dutch oven that I have. It comes out nice and crunchy.

I think the recipe is in the first post. If not, let me know.

I do not add the citric acid to it though. It is plenty sour.

I love to bake. I was afraid I had kneaded my sourdough too much but it's raising in some bowls so far looking good. Soon will be putting it in the oven with fingers crossed.

I can say this to you.... get the butter, get the vegemite. DROOL

Is it possible to do (proper) sourdough in a breadmaker?

Ha ha, funny you should say that, there as enough extra didnt fit on that tray to make 2 more rolls so last minute I flattened them, spread it with vegemite, plopped some cheese on top and shapped into a roll, topped with some more cheese. Lets just say I had a yummy lunch but didnt think the un-vegemited amongst us would understand LOL

Ive done sourdoug in the breadmaker on its dough cycle but then you have to leave it the extra hours to rise enough to tip out and shape. Unless your breadmaker allows you to program 5 or so hour rise time I dont know that it would work on the bread cycle rather than just as dough.

I'm cursed, The bread rose nicely but even though I had floured the bowls the bread dough stuck so it's back to square one.
