Any Home Bakers Here?

I put the dough back into the mixing bowl and put the mixer on knead and kneaded the dough for a couple of minutes. It's still sticky so I went on-line to research free form sourdough bread. I now have the dough shaped and on some parchment paper. If it works I'll be so grateful to the bread gods, as I'm sure someone may be looking out for me and if it doesn't work then it's really back to square one. I'
m not giving up but even though I have done a lot of research and watched dozens of videos, I wonder if other have had as much go wrong. I'm sure It's me. One day I'll make the perfect loaf hopefully. Maybe you can't teach an old dog new tricks, but I will keep trying. The bread so far isn't raising like it did the first time. Maybe I killed the yeast.

I find my sour dough comes out flat if I don't put it in something. If it has sides to contain it it rises beautifully, if it's free form on a tray it goes sideways instead of up. I've never quite got the texture as good as the regular yeast lot I did today though so it is probably a practice makes perfect thing. Learning exactly when you have enough flour to give a nice dough. Will be interesting to try again now I've had a bit more practice with regular dough.

On a side note, think I might have neglected mine to death. Forgot about it in the fridge for a decent while and I fed it last night and this morning and left it in my warm spot but it still hasn't really grown at all. Normally it would be half way up the jar by now :-(

Putting it in the oven and it isn't turning out like I want. Will give it another try in a few days. I'm embarrassed to even post a picture.

I think you need to add the flour by weight instead of volume. I do not pay much attention to the number of cups. For example, the bread that I made today said to add 5 cups of flour. I added about 6 cups and the bread turned out great!

Also, There is only a limited time for the yeast to work. When it runs out of food it dies. You may be able to squeeze more time by adding a bit more sugar.
