I think I will bake this with my next zucchini, thank you for sharingMy mother did not like zucchini bread but she really liked this version.
ZUCCHINI APPLE BREAD
¼ cup butter, softened
¼ cup cooking oil
½ cup brown sugar
½ cup sucralose
2 eggs
¾ cup zucchini, peeled and coarsely grated
1 red delicious apple, peeled, cored and coarsely grated
1½ cups flour
1 tsp baking powder
1 tsp baking soda
½ tsp salt
1 tsp ground cinnamon
pinch ground nutmeg
1 red delicious apple, peeled, cored and sliced
1 cup walnut halves
Preheat the oven to 350°F. Grease a standard loaf pan with butter.
In the bowl of an electric mixer, combine the butter, oil and sugar.
Cream the mixture until smooth. Sift the flour, spices, baking soda,
baking powder and salt and set aside. Add the egg to the sugar
mixture and beat until creamy. Add the sifted flour mixture, about
½ cup at a time until all is incorporated and the batter is smooth.
Squeeze and drain the grated zucchini and grated apple. Fold the
zucchini, apple, apple slices and walnuts into the batter. For a
moister bread, don't squeeze all the liquid out of the zucchini and
apple. Pour batter into the prepared pan and bake for 55 to 60
minutes until golden brown or when wooden toothpick inserted in
the center comes out clean. Remove from the oven and cool for 10
minutes before serving. Serve the bread warm.
Beautiful!I did get the sink plumbing hooked up last night. I was able to sweep and mop the new floor too. I get to bake tomorrow! (in the morning because it is going to be over 100 here tomorrow)

I baked yesterday and donated to a local boys benefit who was in a car accident and paralyzed.
Those cakes are so PRETTY. I'm very "rustic" (lazy) when it comes to presentation, I reckon a plain cake tastes the same as a fancy one, but those are works of art. I'd want one of each (but cookie monster is my favourite). Just lovely....
