Any Home Bakers Here?

I have been putting PIECES received together and this is my final:
1. take out starter (amount needed for recipe)dinner time
2. Add1/2 cup flour to starter and mix...put starter back in refrigerator
3.8 pm make the Sponge (starter, water, flour) amounts needed in recipe
4. sponge sits out overnight covered with plastic wrap
5. next morning add remiaing ingredients in recipe
6. Let sit 2 hours
7. Shape loaves...raise double and bake Do I have it correct? Aria
 
Yes! I use English muffins when I have left over spaghetti sauce. I toast them a bit first pull them out add the sauce and cheese + toppings and throw back in on high and easy snack or lunch.

Thanks again, I've only done homemade pizza when I have time to do the dough, love the idea of being able to do some lunch size quickly :)

But, looks like you got it, except you need to replace water along with flour in step #2.

I will make the addition to 1/2 cup water to add to the starter.

Steps 1 and 2 seem strange to me. The rest looks good.

Step 1, pull starter out of fridge and feed (add flour and water - equal amounts)
Step 2, once starter is "fed" (bubbling and starting to "grow" in the container), THEN remove the amount needed in recipe to add to the sponge and return the leftovers back to the fridge.

I do it a little differently with the recipe I have been using because it takes 2 cups of starter (a lot). I am baking bread tonight, so, I took my starter out of the fridge this morning, it is coming up to room temp, then, when I get off work I will feed it 1 cup each of flour and water to bulk it up a lot so I can remove 2 cups and still have some. Once I remove the 2 cups, I will return ALL of the leftover back to the fridge, depending on how much I have left over, I may feed it again tonight and then put it back in the fridge in the morning. Most people only keep 1/2 cup of starter in the fridge, but since I use so much at once, I keep a little more than usual. I may try making 2 batches this weekend so I will need 4 cups of fed starter at once... so I need to bulk it up a bit first.

the procedure. I cannot believe a person (ME) that taught College
Level for 33 years has had such a time digesting the Sourdough.

will help and guide you. They have started me and walked with me
all the way...until I got it. AND it took me a long time to
