Looks like I'm finally going to get some time to bake today. Guess what DH wants? Cheesecake! Yep, this time a New York style cheesecake. The man is hooked on cheesecake. Might have to find a 12-step program for cheesecake-aholics for him.

Well, the New York style cheesecake was delicious! I'll post a photo later. I'm going to follow @Alice28
's suggestion and slice it up to freeze some (otherwise, we won't be able to fit into any more of our clothes). Experimenting with cheesecake recipes can be hazardous to your waistline, lol).
These are the Mini-Cheesecakes that I make, they are single serving sized and so easy! In fact, I am going to go make some right now. I bet they are Weight watchers friendly ...
Ingredients:
12 Nilla wafers
16 oz cream cheese
1/2 c sugar
1 tsp vanilla extract
2 eggs
Directions:
Line muffin tins with foil liners and place one cookie in each. As an option you can make a graham cracker crust and press crust into bottom of each liner.
Mix cream cheese, vanilla, and sugar until well blended.
Add eggs. Mix well.
Pour into liners, filling 3/4 full.
Bake for 25 minutes at 325°.
Let cool on the counter right in the muffin tin.
Refrigerate or freeze for future use.
Sounds like you are way beyond learning…Glad you are on the thread.I am just learning how to bake breads and dessert. I have made my own pizza crust a few times and a few different bread recipes. Bread sticks, cinnamon rolls and some cakes. I am so excited to follow this thread!
