Any Home Bakers Here?

I'm looking for sweet potato suggestions. I'm being buried by them. We've dug up about 1/3 of ours and that is plenty but some kind-hearted neighbor just dropped off 10-15 pounds more they didn't want and of course DH took them. Now what?

I figured I could boil, mash & freeze some of them but what else?

well they make a great pie like pumpkin, and I have a great sweat potato casserole recipe. They are also really great as prench fries and can be frozen as fries to cook later.
 
Oh, you can also bake them like a potato and if you don't want to use brown sugar try them with garlic powder. I know it sounds bad, but a friend who is diabetic had me try it and it was good which surprised me.
 
Count me in on the muffin recipe and I will try to remember to get the casserole recipe when I get home.
You were so right on the fries being wonderful and you can eat them without needing on them:)
 
Terrific, a pie or a casserole or a muffin recipe (or all 3 of them) would be great! We already love to eat them baked with just butter and salt/pepper. But a person can only have those so many days in a row...know what I mean?
 
Lol yeah i know that my husband and daughter love fried chicken and fries they would eat it every day if they could. I enjoy it but yeah no lol we couldnt really have chicken while growing up (mom would get sick because either her body doesnt like the chicken or something they give chickens) any was so i love being able to eat it freely now but enough is enough.
 
You can probably pretty well guess what we're having for dinner tonight...baked sweet potatoes!

I get what you're saying @Jesusfreak101 . I'm not sure there is any one thing I would want to eat every day, I like variety.
 
Lol dont be so excited lol i hate tomatoes after i had my plants all of spring and most of summer they were over producing each plant would have thirty-fourty ripe tomatoes every day with five plants i was freezing and eating and giving away and throwing to the chickens and still had more. I like tomatoes now that my plants are gone lol i gave several seedlings i am growing we see if they come out. I am going to need to get canning since my freezer cant handle more if they do.
