Any Home Bakers Here?

At tractor supply they had this small green house for twenty buck that has worked wonders for seeds. In spring they should have them again i will be getting another as i learned that it helps alot when growing from seeds plus i can put a pan of water on the bottom and once its closed the humidity builds and helps the seedling grow strong.
 
I'm looking for sweet potato suggestions. I'm being buried by them. We've dug up about 1/3 of ours and that is plenty but some kind-hearted neighbor just dropped off 10-15 pounds more they didn't want and of course DH took them. Now what?

I figured I could boil, mash & freeze some of them but what else?
here is the casserole recipe. It is always a hit especially at Thanksgiving. Make I one day ahead as it is better when it sits.
4 large sweet potatoes or yams (baked and skinned) add
1/4c sugar, 1/4c butter softened, 2 beaten eggs, 1T vanilla, 1/2c milk and beat with a mixer until smooth. Put it in a baking dish. Top with a mixture of 3/4c melted butter, 3/4 c brown sugar, 3/4c flour, and 1 1/2c chopped pecans (or walnuts)
Bake at 350 degrees for 25 minutes.
 
Help! Lol you guys were talking about fermenting the other day, and I'm canning the last of my beets this week and wanted to make beet kvaas... No clue how except some YouTube videos...

I need more details lol..

Is it like a sauerkraut? 


Kind of... Except no vinegar and it uses beets instead. It's more for the juice, a fermented tonic of sorts... It doesn't have a starter, so I was curious if anyone has ever made it and how it turned out... It's like drinking pickle brine. ;)

Same recipe as I use, only my recipe calls for cream instead of milk... So much better than the sweet potatoes made with marshmallow.

two year olds are hard to please. Made three different new items for lunch and she walks up says it stinky and walks away. It was chicken parmesan with noodles, for a salad it was water and cucumber mint salad, for desert brown sugared peaches and blueberries with whip cream.. Little brat and what it this beet thing how do you eat?

Do not bend to her will! She will eventually get hungry, try it, and love it.
