Any Home Bakers Here?

@Alice28 If I have to go shopping for larger size, it's your fault

Made the decision, gonna try NFC's recipe post #10

And use orange icing on top. Will let you know how they turn out.

Oh man...if I had any cream cheese in the house, that's what I'd be making tomorrow. I hope you like the rolls, that's one of my favorite recipes. I've never tried the orange icing, so you'll have to share the recipe for that.

My sister is the master baker of our house. LOL.

(The only time I'm allowed to bake is when she's not home.

) Right now she's making some pate a choux (I'm hoping I spelled that correctly) filled with lemon pastry cream. Her dream is to go to pastry school after she graduates and then open a bakery or cupcakery.

Hi, welcome to our baking thread! I hope things work out for your sister.

btw...I've seen you post a few places and every time I try to figure out your avatar. What's the story?

I prefer regular confectioner icings, I have several orange icings to consider,

Now to do the math, My bread maker Dough cycle will do the work, but max flour is less than the recipe. Will let y'all know how it turns out.

But, honestly, I never met a cinnamon roll I did not like

Bought myself a new food processor yesterday! My existing one worked, kinda, you had to shake it to make it go :-). A local store is moving and had a sale where if it was the one sitting on the shelf not in its box you got it 50% off. I've been looking at them for so many years I couldn't leave it there :-)
It even has an extra grain mill attachment I can buy ;-)

Needless to say been playing with it all morning. Made some date scones and a cake from its cookbook which I think could possibly be my most successful sponge ever once it cools.

I also made some sourdough in it with its dough hook but I'm not sure I'd bother again. Used their recipe and just substituted 200g my sourdough instead of yeast like I normally do but it was soooo wet I had to tip it out and add heaps of flour and the recipe only said to mix with dough attachment for about 60 seconds. It's still doing its final rise so will see I guess. I did try out that loaf roll from the monk video though. Was a bit too soft still so hard to do, but way easier than the roll methods I've seen before. I think I actually pulled it off lol

Hi  :frow  , don't think I have seen you on this thread.   Had to look that one up -- wish you could steal some recipes and share ;)    I love eclairs, and think they are the same pastry?

Hope your sister gets to realize her dream.

Hello! :frow Yes, I kinda barged in I guess. I believe you're correct, but let me double check with my sis. Yep, according to my sis pate a choux dough is used for éclairs and cream puffs.

Here's the recipe for the lemon pastry cream:

And here's the recipe for the pate a choux dough:

Thanks! I hope she does too. (Hopefully I'll get free bakery items from her since I'm family. )

Hello! :frow Thank you! I hope so too.

My avatar is from the outtakes of an episode of Saturday Night Live that Adam Driver (aka Kylo Ren from the new Star Wars movie) hosted. It makes me laugh because in the Star Wars movie he's so serious and intimidating, but when he hosted SNL he was so funny, smiley, and charming. (And he apparently failed to keep a straight face while giving a thumbs up. Hence my avatar. )
