@potato chip and anyone who's interested, here's the ginger/orange coconut flour cookie recipe:

glaze:

zest from one orange (just the orange part, the white part is bitter)
juice from the orange
1/2 cup white cane sugar

set aside

cookie dough:

2 sticks (1 cup) sweet cream salted butter, melted but not hot
1 cup maple syrup
4 medium eggs
2 tsp. vanilla extract
mix together

add:

1 & 1/2 cups coconut flour
1 tsp. baking powder
8 Tbsp. fresh ginger root finely diced

Mix all together until thick.
Shape each cookie and place on parchment paper on cookie sheet. Bake at 350 degree F for 20 minuets, or until lightly browned on edges.
When done slide parchment paper with cookies onto counter and spoon orange glaze onto each cookie. Let cool completely before eating.

I wanted black food dye for the Halloween Egg Contest and found some at a local hobby store - It does taste horrible and very salty/fishy. :sick But I did use it again for my current Spring Chick's eyes in the Edible Easter Contest. If you ever get a Black Frosted Cake from a bakery - don't eat the icing - it tastes quite good but stains your teeth black for hours :lau
Have you ever tried this Sunflour?

Agreed! Can you imagine biting into a piece of cake & having it taste like fish? :sick  I found a black gel dye in the baking section. I don't know if it will work, or if its got squid ink in it (that would be considered a 'natural ingredient') but you can bet I'll be sniffing it before adding it to the glaze. I'm assuming from all the comments that it will probably be more like a gray on the cake, but a true black on our teeth. This should be interesting.  :gig  Thanks again for all of your help. I'll let you know how it goes.

Yeah., I hear ya on that one. I am not a picky person, never have been, but certain flavors do not belong in certain places, and squid in cake is taking it too far!

Haven't had a lot of time for baking. It's chick season. I got some chicks from a breeder and put them in a temporary brooder until I can get my cabinet brooder moved to it's new place and some chicks due to hatch Tuesday. Had to use some sourdough starter so did take a day to make some bread, banana and some blueberry sourdough muffins.

Hi cmom, nice to see you again! I know you're busy right now, but have you thought about entering the Edible Easter contest? I bet you could put together something quickly!

I'm not near as a sophisticated baker as the people on this thread. I'm a simple baker. My birds and now chicks are keeping me plenty busy. The 3 coops we have been working on. The Roofs and vent covers
are now metal. We are working on the coops as we get the metal. Eventually they will all have metal roofs and siding.

Here are some we already did. We had a storm blow off one of the vent covers the other night so I stuck up some plastic up until I can put the cover back on. I was surprised it came off. Not sure If' we'll be able to put it up with the wind today. We live up on a hill.
