Tried a new cookie recipe this morning, very good!

WALNUT BREAKFAST & SNACK COOKIES
(Makes about 2.5 - 3 dozen)

1/2 Cup butter, softened
1 Cup packed brown sugar
1/2 tsp. vanilla
1 (14 oz) can crushed pineapple, well-drained
1 3/4 Cups AP flour
1/2 Cup instant powdered milk
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
1 3/4 Cups oatmeal (not instant)
1 Cup dried cranberries (I switched that to dried cherries)
1 Cup coarsely chopped walnuts

1. In large mixing bowl, cream butter and brown sugar. Beat in the vanilla. Stir in the crushed pineapple.
2. In separate bowl, mix together the rest of the ingredients and combine well. Add dry ingredients to the pineapple mixture and stir until well combined.
3. Drop by rounded spoonfuls onto a parchment paper-covered baking sheet.
4. Bake at 350* oven for 12-15 minutes or until golden brown. Cool on rack.
Those sound really good! Must get some crushed pineapple and try them out. Would love to send a few with Hubs in the morning. He runs out the door without eating and often doesn't eat all day till dinner. At least he could have a few of those with a cup of coffee in the morning (that's if I didn't eat them all - lol).
