I wear classes for reading but have just started with a bit of distance correction for driving. Distance is not too bad though.

The rum cake is no more (DH took the rest of it to work with him to share with his co-worker). So today I made a batch of his favorite cookies and I have coconut cream pie (version 2.0) in the oven. Keeping my fingers crossed on the pie

Give the recipe a try Ron and let me know what you think! It's definitely not shy on the rum taste and is a very moist cake. We loved it with a dollop of whipped cream on top

I need to get a vanilla pudding mix and will give it a try!

This was a baked cream pie. The directions called for baking it one hour, that seemed long so I shortened it to 50 minutes. The filling was solid and dry, not creamy at all.

The recipes I find are for making a coconut custard. I did find one that made a custard and then baked a meringue. It looked good!
