Pumpkin Muffins with Streusel Topping
2 1/2 cups flour
1/2 cup rolled oats
2/3 cup vegetable oil
1/2 cup applesauce
3 eggs
4 teaspoons pumpkin pie spice
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
1 1/2 cups pumpkin puree
1 cup brown sugar and 1 cup granulated sugar
1 teaspoon vanilla extract
Streusel Topping
1/4 cup brown sugar
2 tablespoons butter (softened)
2 tablespoons rolled oats
2 tablespoons flour
(cinnamon/nutmeg additional, your choice)

Mix all ingredients for muffins and place the batter into the muffin tin or cupcake tin. Sprinkle each muffin with streusel topping. Bake at 350 degrees for 25 to 35 minutes or until a toothpick inserted in the center of the muffin comes out clean. Enjoy!

Penny, Looks so inviting. I noticed you had a photo of scallions.
....I just heard about it and it works. You use your scallions down to the very end and leave a small piece next to the root....and place the root in a small glass of water...leaving the top end out of the water. Just leave
the root in the water. AND it grows green again. I tried one the other day and it is back to normal size. Today I cut up a bunch and put the root sections in small glasses of water. It does work ....neat. Aria
 
That reminds me, I found this in my photos yesterday. You can recycle your celery. :thumbsup It took about a week for that to emerge.
