@rjohns39 Youcan also buy wheat gluten to add to doughs to give the extra gluten needed for rising. I use all-purpose flour and vital wheat gluten when I make bread and it turns out nice.

beautiful bread!Well I made Asiago bread yesterday, but I'd like to do better. Here's the base recipe https://www.food.com/recipe/asiago-cheese-bread-excellent-261935 I used bread flour, took out a cup and added 3/4 cup whole wheat and 1/4 cup rye. Wasn't able to get to a soft dough. Even though it turned out well, I'd like to soften it up a bit. Would love thoughts. Here's a couple pics. The crumb is nice and soft, but not as airy as I'd like.

They look good! I think I would like them really spicy.I made molasses cookies for the first time yesterday. They are good but strong. I’m thinking I need to back off on some spices.

A couple of years ago, 2 days after surgery, my dog escaped from the fenced yard and I found him in the neighbors pond. Of course he had to go out on the ice to chase the geese and fell in. I waded knee deep and had to break the ice for him to get to shore and he was just about exhausted and ready to go under when I finally go him close enough to shore to grab him and pull him out. Then we had to climb over a 4' snowbank and a small stream before we got back to the truck. I barely had the strength to lift him into the truck - he could barely stand he was so tired.
I make my sweet potatoes with orange juice and fresh ginger. We like them so much better than the brown sugar and marshmallows.Such yummy baking here...oh gosh. Can't wait to see some Thanksgiving meals! Hoping to nail a Sweet Potato Casserole this year

I agree!Bob, It is a beautiful loaf. I dislike the "holes". I prefer texture
like yours. It is difficult to USE...with all those holes. Your BREAD is perfect for me.
