Just made a NEW Recipe: Cookie/Biscotti
One large bowl and a whisk
3 eggs
3/4 cup sugar
2 1/4 tsp yeast
1/2 cup oil (veggie) lemon rind
Chopped Nuts (your choice Almonds, Pecans, Walnuts) 1/2 - 1 cup
4 cups AP Flour (start with less)
Mix all with a whisk (EXCEPT THE FLOUR)...
Then fold in the yeast and the flour....bring together with hands.
Pinch pieces of dough (your choice of size of pinch)
Place on cookie sheet lined with parchment. Bake 350 oven 15 minutes
Please note: I use lemon extract and I would start with 3 1/2 cups flour
and make a SOFT PINCHABLE dough. I made 42 cookies
