Any Home Bakers Here?

I kept part of the sponge I had from baking the last loaf a few days ago. I fed it some flour and sugar and kept it in the fridge. Today I used some of that sponge, took kickstart a loaf of whole wheat bread. It turned out to be a decent loaf.

Does anyone know of Dr. Gundy? He is "saying" grains are not good for
some of us. EEK. He goes on and on and I do not have the patience to
listen. It's a while before he SAYS why etc. And some of foods we
consider Healthy...he says they are not good for us. What a trip.....
