Found the problem with my mental state. Believe it or not, it WAS baking related.

I was going through my pantry to make some juice. I noticed that my mother who has a vision impairment accidently bought juice mix with caffeine, and I have been drinking it a lot for 2 days without realizing it was caffeinated.

Oops.

Studies show that too much caffeine can lead to SEVERE anxiety.

So, in a nutshell, I had WAY too much caffeine in my system.

I sleep better

I am going to see if I can bake something tomorrow. Don't know what to bake yet.

By the way, here is something else I found out about myself through a science experiment. If you guys know anybody who has ADHD, this will help you understand what their mind is going through.

And this comes from somebody who has ADHD.

Recently, I performed an experiment. My hypothesis was that my mind operates at such a speed that my body cannot keep up. Hence, it causes me to be overwhelmed and stressed.

I performed an experiment with Bach's Toccata and Fugue in D Minor. I played the piece very slowly in the beginning. I marked wherever I made a mistake and the reason I made that mistake. In this case, I only wrote down mistakes where I was thinking ahead in the piece.

When I finished playing slow, I took a look at the mistakes I wrote down. All these mistakes were because I was thinking ahead in the piece. One mistake was even 92 symbols ahead of where I currently was playing. In a nutshell, I played the wrong parts of the piece at the wrong time because I was thinking about it.

The standard deviation of how many symbols ahead I was thinking when I was playing slow was 25.

Then, I played it fast. The way it's supposed to be played actually. When I did this, I did the same thing. I wrote down the mistakes and where I was thinking in the piece.

This time, the standard deviation was 2. Not many mistakes, not many notes ahead of where I was in the piece.

So, here's what I learned. My mind operates very fast, and my body has to go very fast in order to keep up with it. When I play music, I have to play fast in order to keep my mind and body in sync, even though the piece may be a slow piece.

The speed of the mind is relative to the individual and the state of their mind. What may be the little Fugue in G minor for one person may actually be the Toccata and Fugue in D Minor for another person or Flight of the bumblebee for another, speed wise.

Everybody has a different speed in their mind. Sometimes, the mind may go so fast that it overwhelms the body.

This is ADHD. The mind is quite literally hyperactive, causing the subject to be overwhelmed and stressed.

I have bipolar so can relate. It's a different way of thinking. Sometimes I can be doing something but my mind is on the million and one other things that need doing right now. So the thing I'm supposed to be doing can end up with mistakes. Either that or I go off to do something else and forgot about it. The difference being that my mind and body are both moving very fast. Sometimes too fast.

Case in point 1965 Ma took us to the Dr my brother and I she asked if we could be helped
we were quite over active .. He ran a litengy of tests said We where off the scales in intelligence that would not change but wanted to put us on ridalyn to slow us down ..
Ma said no thanks I will just nock them in the head

 Was I supposed to be joking? I already moved the hermit crabs and sand.
That would be a LOT of sourdough starter!!!

I realized the other day as I was making the 1-hour french bread that I have been using the King Arthur High Gluten Bread Flour.
But not ;) Note your bag says "King Arthur's". KA is "King Arthur" and always has the same logo

Paid $6.49....a bit pricey...but
NO BREAD FLOUR around here.
Heck of a good price actually, $9.95 on the KA website and I bet that doesn't include shipping.

@bruceha2000 I would be willing to mail you some! the Mennonite store has at least 4 different Whole wheat flours to choose from. And 2 of those I can buy in a 50 lb bag...

Are you anywhere near one of the two Mennonite communities in Vermont? Maybe they have a country store where you can find some whole wheat flour.
Nice of you to offer but I suspect the shipping would be way too much!!

I didn't know we have Mennonite communities! I see there is one in Wolcott, about 40 miles east.

So, in a nutshell, I had WAY too much caffeine in my system.
 That will do it! I stopped drinking caffeinated coffee 40 years ago.

One mistake was even 92 symbols ahead of where I currently was playing.
WOW! Your mind really was way ahead. I guess that wouldn't happen if you were playing a piece you'd not played before?

When I play music, I have to play fast in order to keep my mind and body in sync, even though the piece may be a slow piece.
Hmmm, now that you recognize that pattern is there some way to get your mind to focus on the notes on the page?

This is ADHD. The mind is quite literally hyperactive, causing the subject to be overwhelmed and stressed.
Helpful description. People tend to think everyone thinks, sees, etc like they do because they have no other reference. Some of the descriptions of Autistic people and how they mentally perceive things is really interesting. Like to some, numbers are "seen" in their head as shapes and colors not the symbols other people see.
