These were some tasty breadsticks! The recipe is supposed to be an Olive Garden copycat, I can't say as I haven't been there for a long time. The recipe makes 12, this is what's left after dinner last night (DH ate 4 of them

).

Breadsticks:
1 Cup and 2 Tablespoons warm water
1 1/4 teaspoon yeast
2 Tablespoons sugar
1 1/2 teaspoon salt
3 Tablespoons oil (I used olive oil, there wasn't a particular oil specified)
3 to 3 1/2 Cups AP flour
Topping:
2 Tablespoons melted butter
1/2 teaspoon garlic salt
* In the bowl of a stand mixer, dissolve the yeast and sugar in the warm water. Let sit 5-10 minutes, or until foamy. Add the salt, oil, and 2 Cup of the flour and mix until combined. Add additional flour 1/4 Cup at a time, mixing thoroughly, until the dough pulls away from the sides of the bowl and is soft and just tacky to the touch (takes about 7 minutes).
* Knead the dough until smooth on a lightly floured work surface, just enough to make manageable. Place the dough in a lightly greased bowl and let rise until doubled, about 1 hour.
* Punch down dough gently, and divide into 12 equal sized balls. Roll each ball into a 9" rope and place on a baking sheet lined with parchment or a silicone liner. Don't crowd the dough ropes, divide between 2 baking sheets. Cover and let rise another 1 hour.
* During the last 10 minutes of rise time, preheat the oven to 425*. Bake 12-14 minutes or until golden brown. Remove from the oven and brush with the melted butter mixed with the garlic salt. Serve warm.
