Any Home Bakers Here?

I have dried butter beans here but I intend to do a 48 hour soak for the nutrients value.

Would anyone have a recipe? I would love to make a butter bean soup and too freeze some for another meal.
I hope someone has a recipe for you! I found some for cooking them with ham

Ingredients

  • 1 pound dried butter beans (large lima beans)
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 bay leaf
  • 1 smoked ham hock
  • 1 teaspoon pepper vinegar

Instructions

  1. Place the butter beans in a pot. Cover with 1 inch of water and stir in the salt, pepper, garlic powder, and onion powder. Bring the pot to a boil on high, then turn off the heat and cover the pot and let it sit for 20 minutes.
  2. Preheat the oven to 300°F.
  3. After the beans have soaked for 20 minutes, add to the pot the bay leaf and ham hock. Cover the pot and place it in the oven and cook covered for 45 minutes. Remove the lid and continue to cook until tender, about 15-30 minutes, depending on the beans. Remove the pot from the oven.
  4. Take the ham hock out of the pot, and remove the rind and bone, then dice the meat. Stir the meat back into the pot, then add the pepper vinegar. Taste and adjust seasoning.
  5. Serve warm.

That's made my mouth water. I'm going to start soaking the beans. Thanks Ron :)

Breakfast burritos here tonight.. Funny but like my stove/oven so well I do not have any fancy pot's or pressure cooker soup pots tried a couple. Just back to the stove
I got an Instant Pot to check out some of the fantastic claims. In my opinion the benefits of an Instant Pot are exaggerated. I gave it away.

I do have a slow cooker that I really like and use. Other than that I only use the stove, oven and microwave.

I know I'll be using my Instant Pot a lot on Thanksgiving. Maybe get the second one out too.

I use the 6 quart one for cooking rice more than anything else, most of the time, and with the air fryer lid to cook potatoes. And it makes really awesome beef stew. I use the 8 quart to make bone broth and bigger amounts of stuff.

No, it isn't the be all and end all of kitchen appliances. But if my stove (which is 42 years old) dies, I can still manage just fine.

We finally got our gas turned back on! They forgot our house after they replaced the neighborhood gas line. Hot water and the stove, yay!

My ovens are dying. Top one has all sorts of error messages if it bakes above 375 F, so we have to use the bottom one, which is set with a dial, which is typically incorrect on temp. :/

@jnicholes I’m trying to convince myself to get up for the eclipse! We’re supposed to have great viewing conditions here.
