Any Home Bakers Here?

Made 6 doz choc chip cookies with pecans this morning. Took 3 doz to mechanic's this afternoon. Had appt to get new tires on my money pitt, aka '03 Jeep Liberty. He takes good care of all our vehicles. Last week we had new headlamps installed on this old girl, today it was two new rear tires, and now she needs new ... Shoot, can't remember. Has to do with the steering. It'll come to me but it's late and I'm tired. Tie rod ends? Does that sound right? Anyway, the cookies were a hit. The Jeep is grounded till this gets done, I can feel how loose the steering is, and it's the car my GirlChild drives.
 
Good morning, bakers. About a year ago, you guys were talking about the website Nuts.com. I occasionally look to see what interesting things I can find, and I just stumbled upon flours. They have a large selection of flours, some I’ve never heard of. It’s more $ than the grocery store, but if you are experimenting with different flours, or you don’t want a lot because it’s a recipe you’re only making once, it’s worth considering. There is a local bakery that makes wonderful kringles, so I am off the hook for making them regularly. When we lived in Wyoming, I made Kringles more often because there really weren't any bakeries that made them. The Racine kringles from the store are OK, but don't compare at all to the good ones. There were a couple of years where I made Kringles for friends for Christmas. One year I dropped the Christmas kringle off at the neighbors and it turned out her parents were visiting. They lived in Pheonix, but were originally from Wisconsin so they were really excited about the kringle.

I’ve actually never made one before! I’m excited, though. I’m not a big fan of kringles myself, but I’m perfectly fine with making them for others :)
 
Here is my #1 hint at Kringle making: Don't rush making it - if the butter starts to get soft as you are folding the dough, stick it back in the fridge to get cold. you need the butter to stay separate from the dough layers so it gets nice and flakey when you bake it.
#2 : bake on parchment paper in a rimmed cookie sheet. The butter and filling in mine always ran out a little bit - the first time I used a flat cookie sheet and the gooeyness ran off the pan and started smoking (burnt sugar is not good) on the bottom of the oven.
