It's not baking, but I have fried rice with home grown onion and eggs!

I make a number of different rice dishes. The rice is a side dish to our dinner meals. Recently a friend gave me a heads up on a good rice dish. Called Arroz con Gandules.
I looked up the recipe. (3 different ones BTW) and purchased the necessary ingredients. Will test drive making it in a few days.
