Made 12 eclairs, finished yesterday evening. This morning, only these six survivors remained. As of this writing - what eclairs? I could not fill them with a pastry bag, I had to cut them in half. They were a bit on the crispy side. I made vanilla pastry cream for the filling and a chocolate ganache for the topping. They were 5" long by about 1 1/2" across. Some of them collapsed, though I did cut slits in the sides immediately after baking to release steam. Nobody cared!

Yummy Yummy.

Cheated and made a box of Mac and cheese. Added spam to it.

Maybe next time , avoid cutting the slits., then possibly they will not collapse. :idunno
You may also try and have filling ready to inject when they are still warm. I did that with some cupcakes I bakes some time ago.

Your eclairs look just delish:drool:drool:drool
Hunh. Recipe said to release the steam so they would not collapse but IF I make them again I will try your way. I did have the filling ready but (again), the recipe said to cool the shells and not put the cream into the hot shells. Thank you, they were!
