Any Home Bakers Here?

Recipe? I don't have any GF muffin recipes. We used to make muffins a lot, but not since I went GF.
You can easily make gluten free muffins, by replacing the regular flour with a mixture of milled brown rice, milled Buckwheat and milled amaranth, I would use some kind of strong flavor like finely grated organic lemon ( or orange) peel / and or vanilla,of course use butter instead of oil or margarine, it adds a lot of flavor! I feel the gluten free stuff is a little more „tasteless“ than the regular muffins, I know someone who always adds finely ground coffee to his baked goods, but you must be a coffee lover for that!
 
So yellow cake is made cream cheese frosting on it.
Recipe was out of 1961 Wisconsin cookbook.

Yellow Cake
2 1/4 c Flour
1 1/2 c Sugar
1 tsp salt
2 1/2 tsp baking powder
1/2 c shortening part butter
2 eggs one at time
2/3 c milk
I added pudding like 1 cup

Basic bake 350
Sift dry add sugar and shortening with milk.
Add beat 2 more minutes add eggs one at time.
Says you can add yellow food coloring, Did not need to eggs made it yellow. Only shortening in the pan, two rounds or a sheet cake.
Bake up to 35 minutes.

Penny,, Do you like using Glassware for baking??
Only time I used Glassware,, is when I made Real Flan.
 
Took the day off and enjoyed some baking today. We had homemade white pizza made with chicken chunks from broilers we raised last year. After dinner I baked my favorite Honey Oatmeal bread, which makes 2 loaves.

The white sauce is homemade alfredo topped with sliced fresh tomatoes from the garden, cheese of your choice and chicken chunks.I would have added fresh mushrooms but we were out of them. Yes, we season and cook the chicken before putting it on the pizza.
