Nope, no guineas or quail or pheasant. My palate has led a sheltered life.

Guineas are considered a delicacy. Properly cared for pheasants are also excellent. Different varieties of quail have different flavors. Chukars are excellent.

My maternal grandfather would harvest squabs in his hayloft.

You are missing out, it is very delicious!!! and it is nevery dry, cos of the fat

Our neighbors in Canada raised quail, so we also got to eat some, they are ok, but nothing I would miss eating … what I would like to try is squab wait!!! I just looked it up, squab is basically a baby pigeon no, then I prefer trying a pigeon !!!

We had duckling once, in the early years of our marriage. It was incredibly fatty, think I lost half of it to drippings. Not impressed.

Muscovies are generally less fatty than other ducks and good eating. They taste surprisingly similar to beef.

You need to Brine and Cook duck right, and render out the fat.

Hey Home Bakers.
My Dad was Pearl harbor saw lot's of death. So he did not believe slaughtering anything was in his wheelhouse.
Never had duck till I was adult not really impressed.
