Pretty much. I clump the salting that has to be done afterwards under shechitah.That's what I figured but I wasn't quite sure. So Shechitah is the procedure for kosher meat? I wish we had a kosher deli in my town.

Shechitah has nothing to do with slitting the jugular vein, it is the trachea and esophagus which must be slit.
