Wow! that's a difficult one. The more one knows, the more difficult it is to answer. Jewish Holidays are part of a cycle, although by superficial glance they may not seem to be.
Growing up a liberal jew in America, my answer would be (not in this order) Sukkot, Hannukah, and Yom Kippur/Rosh Hashanah. The last one is actually two holidays but they go together so I linked them.

Generally Rosh Hashana and Yom Kippur are considered the most important.
