Arizona Chickens

I tried to take a picture of the clouds at sunset after the rain, but it didn't work out as well as I'd hoped. Anyway, this is the view from behind my house.View attachment 2639111

LOL, she's prettier than that blue egg was. :)

When I look down the hill in a different direction from the house I can see the nearest neighbor's roof, so one roof is visible from here, easy to spot because it's a metal roof painted fire engine red. So at least it doesn't seem like I'm all alone. And there's no one close enough to care about crowing, which is great, because Big Ben does his fair share.
 
Does anyone here like Brussel Sprout's? I found this recipe to try, and that dipping sauce look's like it would be good also.
Will need to try it.:droolWe do consume brussel sprouts when we have larger family gatherings. It is a nice side dish. We only steam it cooked on stove-top.
Some members in our gathering limit their consumption, claiming it produces Gastro-intestinal air.:D:gig My body chemistry :bowagrees with it and I have no negative issues :old :idunno

Maybe I will try a smaller batch of recipe in my Air Fryer.:thumbsup It is a fantastic machine that acts like a mini oven, without heating up the whole house, especially in Summer.

Many recipes I modify slightly due to ingredients on hand. Then I also like to experiment with different seasoning to try:cool:

Sounds yummy. There is a recipe somewhere around here that I made a few times using toasted brussels sprouts with lemon on pizza. Believe it or not, it was pretty good. Gotta find it.

Brussels Sprout-Lemon Pizza


Brussels sprouts make for a crispy, chewy pizza topping. Lemon slices, ever so slightly caramelized, add zing.


  • Prep: 15 mins
  • Total Time: 25 mins
  • Yield: Makes one 12-inch pizza

Ingredients


  • 1 tablespoon plus 1 teaspoon extra-virgin olive oil
  • 3/4 pound store-bought pizza dough
  • 3 ounces lightly salted fresh mozzarella, thinly sliced
  • 1 1/2 ounces finely grated Pecorino Romano cheese (about 2/3 cup)
  • 3 cups packed brussels sprout leaves (from about 1/2 pound)
  • Coarse salt and freshly ground pepper
  • 5 paper-thin lemon slices, cut into half-moons (from 1/2 lemon)

Directions


  1. Preheat oven to 500 degrees. Brush a 12-inch cast-iron skillet with 1 teaspoon oil. Press dough flat in skillet, spreading to edge (if it retracts, let rest 5 minutes before continuing). Brush a 1-inch border around edge with 1 teaspoon oil.
  2. Scatter mozzarella and half the Pecorino evenly over dough, leaving a 1/2-inch border around edge.
  3. Toss brussels sprouts with remaining Pecorino, remaining 2 teaspoons oil, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Scatter sprout mixture over cheeses, and top with lemon.
  4. Cook over medium-high heat until bottom is golden brown, 4 to 5 minutes. Transfer to oven, and bake until edges of sprouts start to char, edge of crust is golden, and dough is cooked through, about 10 minutes. Season with pepper.
 
Did anyone else get a bit of rain and wind just now? My chicks are running up into the coop for shelter haha, my older chickens seem to be enjoying the wind and are out in the run. I’m guessing it’ll be just a few more months until I can integrate the chicks! They seem to be getting bigger with each passing day :) This weather calls for a nice night out on the porch :love
 
All five of the pullets laid eggs today. Anybody have some good recipes for using up eggs, other than omelets, scrambled eggs, and hard boiled eggs?
I don't use a recipe, but a crustless quiche. about 8-12 eggs, 1/2 cup shredded cheese, some cream, spices, some broccoli or other veggies. Maybe some bacon. Bake about 325 until done. I try to measure or look up the capacity of the baking dish, then use a mixing bowl that has measurements on it so the amount of ingredients fits in the dish.

Just lots of wind the last several days, a squal line or sudden gust came thru a bit ago. No rain with it though.
