Awesome banana bread recipe -- Uses 5 eggs!

Moist Banana Bread
Makes two loaves

2 ½ cups of flour
1 ¼ cup white sugar
2 pkgs. 3.4 oz. instant vanilla pudding
1 ¼ tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
5 eggs
2 cups mashed ripe bananas (4-5 medium-sized bananas)
- It’s best to use a food processor.
1 cup canola oil
1 tsp. vanilla extract
1 cup chopped nuts (optional)

1. Combine first six ingredients in a large bowl.
2. In another bowl, whisk together the eggs, bananas, oil and vanillas.
3. Stir the wet ingredients into the dry ingredients until just moistened.
4. Add nuts, if desired.
5. Transfer mixture to two greased 8”x4” loaf pans.
6. Bake at 350 for 55-65 minutes or until a toothpick inserted near the center comes out clean.
7. Cool for 10 minutes before removing from pans to wire rack.

I used this recipe but only had alittle more than a 1/2 cup of oil so I added applesauce. the batter was very thick but what a nice banana bread!
My husband loves most of what I cook but never my banana bread. He said you've never made that banana bread-this is good and ate 1/2 a loaf! I brought it to Cub Scouts and it was well recieved too.

I love these multi-egg recipes.
And this one will use up those going-brown bananas in my fridge too!
Will make this as soon as I pick up the pudding mix*.
