It’s official 2 large egg layers in the flock… now I need to Identify which two, so hopefully I can breed for large eggs.

Unrelated to chickens my niece and nephew were invited to a birthday party and so we went along with other families we know… at a fun trampoline wall climbing place at the mall, super loud... Long story short we and another parent went across to the adult food place in the mall, so we could talk and snack… after the party we were joined by his spouse and their kids and ours… plan being chat, and feed kids more food as they were hungry still. Then at Planet Fitness (also in the mall) across from us one very clear gun shot. Now hubby, our retired sheriff friend and I were all that’s a gun shot… people at the restaurant kept telling us no, but we were all no yeah that was a gun shot from behind us, pretty soon people are running, security is escorting people with kids out of the bouncy party place, the movie theatre on the other corner across in the mall is shutting it’s door and their employees are running around… mall went into lock down… anyhow ultimately we moved out our group of adults and kids in an organised way… and went to a restaurant across the street. Our understanding is a guy applied for a job at Planet Fitness, then picked a fight over religion with a member and attacked the person trying to work out, the member tried to not fight and disengage and the aggressor shot the guy! Then took off…

Anyhow be safe folks some of the people in the neighbourhood ain’t right in the head.
 
WW2 recipe

Rice and Chicken Casserole Ingredients:
1 large cooked chicken you can use chicken breast and sauté it rather than baking a whole chicken.
2 cups of uncooked rice
1 1/2 of tablespoons butter
2 cups of milk
2 eggs, beaten
1/4 teaspoon of salt
Step 1: Preheat oven to 350.
Step 2: Bone the chicken and cut the meat into 1-inch pieces.
Or sauté a few chicken breasts and add tomatoes, onions, and rosemary to the mixture. Tomatoes were a popular vegetable grown in Victory Gardens, and rosemary was commonly grown herb. Bake 20 to 25 minutes.

If you cook Kosher you will need to substitute out the milk and butter, I would use a plant based milk and margarine.

If you change the spices you could use Coconut Milk and water, maybe a bit of curry or just coconut flakes or even cardamon to make a completely different tasting casserole. Or go Cajun or Mexican with the spices instead… lots of ways to finesse this recipe.

Yes, that one was good, but you need the right oats the first time I tried it I had steel cut in the cupboard it did not work, the second time I used regular rolled oats and it worked… you can then fiddle with the recipe once you get the hang of the basic recipe. You know how it is with Tomatoes and Summer Squash… plant a few feed the neighbourhood... so new recipes are always fun for those garden vegetablees.
 
French can make any dish sound fancy… pain à la viande and les petits pain fourré gumbo… Meatloaf and Okra stuffed bread (loose meat sandwiches with okra, Canadians like okra in their Sloppy Joes, they also prefer it on hotdog buns)… so I think I will start calling my Sloppy Joes Les petits pain fourré and my Meatloafs pain à la viande.

The French Canadian spin on Sloppy Joes uses hotdog buns, so I guess every time I used hotdog buns in the past (because that is what I had), I was doing it the Canadian way… 😂

I will say their recipes range from simple like basic USA to pretty darn gourmet on the stewed loose meat sandwich except the bread which is sort of humorous...

I just made some with Hamburger buns, but my husband and I were discussing all sorts of experiments we could do using different breads, rices, noodles and so on. This time I used protein crumbles and the spice mix with tomato sauce… next time I am using the spices in the cupboard and adding in sautéed vegetables and a different starch… better bread... and red wine I think.
