Boiled eggs don't peel easy

I use PaulaJoAnne's method.

Before you boil, pierce the air cell end of each egg with a push pin. Lower them into water and bring to a boil, then turn off the heat and let sit 20 minutes.

Drain the water off, knock them around to smash the shells, and run very cold water over them.

Perfect peels!
 
Basically what you are dealing with is the fact that your backyard eggs haven't aged like the store bought ones. The store eggs are "old" by the time you get them and have started to dehydrate. So something else you can do is to mark some of your eggs to save for boiling later. Let them age about two weeks in the refrigerator until you boil them. Peeling should be much easier then.

Thanks for the info. I've been battling with my fresh eggs to peel them without saying a few choice words and decided to get some advice. So I came to good ol' Backyard Chickens (did a search) and my problem is solved. This website sure can be helpful. Thanks again. Now I can make deviled eggs without them lookin' like a mess. LOVE MY FRESH EGGS.
 
Haven;t tried piercing yet. But the other methods above don't work on all my eggs. What I fould on this site that works is leaving the eggs in the fridge, bring water to a boil, then add eggs bring it back to a boil, a minute or so. Take it off the heat for 10 minutes. Drain off the hot water. Cover in ice and a little water. Start peeling. Every one a good one.

I think the original instructions didn't bring it back to a boil, but I have some jumbo eggs and all weren't cooked through on the yolks so I bring it back to a boil before starting to time. Perfect yolks, no overdone edges. Soft creamy whites. Great for deviled eggs.

Try this method out on those Maran eggs. Yes, Ameraucana eggs are also easy to peel most any cooking method, and Buttercup eggs aren't to bad. But my brown eggs used to be annoying.
 
We've been aging ours in the fridge, which seems to help, but I'm going to try the salt method...seems to give good results!
