Breakfast issues... suggestions, anyone?

I am type 2 diabietic and manage to control it with diet only at this time. A couple of hard boiled eggs as I go out the door and a bit of yogurt, not the low fat crap as that usually has a ton of sugar, carbs, and my sugar doesnt spike and I am not starving by 10 am
 
I have always held to the idea that it doesnt matter what you eat in the am, as long as its something healthyish!

I don't care for breakfast foods at breakfast tbh. Never have. I eat cereal as a snack, and often have eggs for dinner. I usually eat leftovers for breakfast, or soup and a sandwich, or even just a sandwich and fruit. I have been known to cook teriyaki chicken w/veggies and rice for breakfast, or have a hamburger with a salad early in the morning, especialyl when it is cold cold cold outside.

As long as it is not junk food, you are good to go!

I always try to make enough nori rolls to have a platterfull for breakfast.

Its been over a year that there's been any leftovers for that. Dang! Boys got big appetites, fast!

I bet we could make tripled recipe and still have no leftovers for breakfast the next day.

On the back of the Sushi-Nori dried seaweed package, instructions for rolling the "sushi rolls" (actually we've never used any raw fish).

I think the sweet/salty rice, the orange scrambled egg in the center and the dark green vegetable surrounding it makes a very delicious and healthy breakfast. Rolled in toasty sesame seeds, its a perfect toasty, tasty breakfast. And very cheap to make. If you don't have boys growing up in your kitchen, it would be easy to make a platterfull of these and grab some for breakfast for a week! Different, but good. Very good

I recently started my 13 yo on carnation instant breakfast- she hates to eat in the am, but the mommy in me can't stand it, and she gets terrible headaches. So, she now drinks that while getting ready for school and goes to the bus stop with a nutragrain bar or poptart or somethhing like that.
 
We make a ton of french toast at a time and freeze everything we don't eat. Hubby heats up a few pieces every morning for breakfast.

Me on the other hand..... I make my own granola bars.
