I moved my ducklings to their own brooder. Because they were getting the bedding all wet; and didn’t want my chicks to get sick. Anyways, I got them their own lamp; and now, they’re all laying on the far end of the brooders. Is two too many? Should I, sort of, straddle the two brooders with one lamp?

The temp inside the brooder with one lamp on both, is about 78/79 degrees.
78 in which part? You need to measure both the cool end and the hot end.

How old are the chicks and the ducklings?

Really need to make a cover that's ventilated, something like a piece of hardware cloth edged with cardboard will do. By covering up with so much solid surface you're trapping heat and ammonia inside.
