Butchering - Knife Recommendation Needed

Those Joyce Chen scissors are about the handiest tool a person could own. I bought a very expensive pair of Wustoff poultry shears and sent them back because they didn't cut through a chickens back as well as my very old and very well used Joyce Chen scissors.
