I'm not sure I've ever been pooped on, but yes, in order to hold them you need to get past the point where you think you are helping them by being gentle - a firm grip is necessary and if you can get their head tucked away in your palm or behind your fingers that usually keeps them more calm - if the head is out they always try to escape.
As for flying, I believe I've actually read a document somewhere stating that in their natural environment, some buttons are migratory birds - meaning they can stay on their wings for miles if they want to. Luckily though, they tend to land pretty soon after escaping and then you usually have a few seconds after their landing where they are frozen in the spot - if you act fast you might be able to catch them with your hands.
