Ok,folks...I promised the pie recipe, so grab your coffee, here it is. Sorry there is no picture, we ate it all!
For those of you who do not have a crust recipe, I highly recommend this one. I've been using it for years and if you don't need the second crust it freezes well. My father, who is a pie conisseur, has stated it is one of the best crusts he's ever had.
Two Crust Pie Pastry
3 C. Cake flour
1/2 C. All purpose flour
1 1/2 tsp. Salt
3/4 C. Cold Butter, cut into pieces
1/4 C. Butter flavored crisco
7 TBSP water
1 egg, lightly beaten
2 tsp. Lemon juice
Mix flours and salt together. Using a pastry cutter, cut in butter and shortening until mixture is pea-sized lumps. In a small bowl, lightly beat egg. Add lemon juice and water. Add to flour and mix with fork, "lifting" the flour to mix in the water. Knead a few times until dough is smooth. Divide in half and chill for 30 minutes before rolling on floured surface.
I've only made this using Strawberries, although I will be trying it once the Raspberries are ready!
Rhubarb Raspberry or Strawberry Custard Pie
3 C. Rhubarb, cut into 1/2" pieces
1 C. Fresh Raspberries or Strawberries ( dice Strawberries)
1 1/4 C. Sugar
1 TBSP flour
1/4 tsp. Cardamom (the recipe calls for nutmeg, but try this spice instead)
4 Eggs, beaten
Combine dry ingredients in a small bowl. Add eggs and mix until well blended. Spoon fruit into prepared pastry crust, pour egg mixture over fruit. Cover with crumble topping. Bake at 375 degrees for 40-45 minutes. Cool completely before serving (I made mine a day ahead). Refrigerate any leftovers.
I have two crumble topping recipes. The first is the one I use on my apple pie, it is very good. It is also the crumble I used on this pie. The second one is a new one that I used on some muffins. It was divine, but I don't know how it would hold up on a pie.
Crumble Topping #1
3/4 C. Flour
1/4 C. White sugar
1/4 C. Brown sugar
1/3 C. Butter
Combine dry ingredients. Cut in butter until it resembles coarse crumbs. Sprinkle liberally over top of pie prior to baking.
Crumble Recipe #2
1 1/2 C. Flour
1/3 C. White sugar
1/3 C. Brown sugar
1/2 Tsp. Salt
1/2 C. Butter, melted
Mix dry ingredients in a small bowl. Add melted butter and mix with fork until mixture becomes crumbly.
(This recipe also included 1 TBSP of poppy seeds; however that would probably not work with this pie!)
