So what happens if it is not fine? Fermentation? Mold? What is with the sap that you need to process immediately? Sounds like roadkill in TX has a longer shelf life!

@Mtn Margie Sap will spoil, like milk. "Shelf" life all depends on what part of the run it's from (early or late in the season), temperature it's stored at, container it's stored in....

The biggest problem is that there are too many factors to ever know what the "safe" amount of storage time is. Sap will start too go cloudy when it's been stored too long. You can freeze it to keep it longer. The sap I need to sugar off has already been boiled down for a long time, so it's no longer being stored at a nice cool temperature. It's the unknown...so better safe then sorry. Wouldn't want all that hard work to go to waste! All those factors effect taste as well;but I'm not too concerned with that as long as the syrup is good I'm happy

(and once sap is syrup, it's safe from spoilage for a long time if sealed properly and kept in the fridge once opened)

An hour ago we had a 65 mph gust, now.... dead calm, back up to a very slight breeze. Whatever. I am baking bread and cleaning/ organizing today so it can do what it wants to out there.

And thank you for the reminder! I'm going to get some bread going right now!

I love pulled pork, and would love to try maple-rum cake. I have to go easy on the rum though, I am a cheap drunk - just smelling it and I get giggly and lose my austere presence.

Just got back from Ct. Went to Foxwood Casino to celebrate the Princess's birthday.

That sounds like a good time!
I still had to go out and play in the wind. A neighbor called me for help with a big tree that blew down in their driveway and she had to leave for a doc appt and couldn't get the car out. Her DH had a little 16 inch Stil fired up so I made due and got the tree done up for them. They are an elderly couple and were having a hard time even standing up in the wind let alone dragging slash and tree pieces. It is rocking about 75mph out there..... wheeeee!
