The golf course & restaurant only has a 6-month water permit (mid-April to mid-October). Because it's been shut off for 6 months the health department requires it to be tested by a lab and approved safe for human consumption (which includes dishwashing, the hand sinks in the bathrooms, etc.).
I follow the health department guidelines by the book...no way would I want to put our ability to operate or our reputation at risk by running afoul of the H.D. Sometimes their rules seem a bit excessive (like when we had made our sterilizing solution for cleaning the restaurant table too strong...we had to dial it back in case some kid licked the table). But mostly I agree with what they want. I know I want to feel safe eating at public places!
