I roast any and all veggies in any and all combinations and they always come out delicious!
I seem to have the uncanny ability to burn most of what I try to roast.
It's an oven problem' out of sight out of mind until it starts smelling.

I've discovered a completely unforeseen problem with this double sitting business.
The nest is in the house nest box. Ruffles sits during the day and Tackle during the night.
There are reasons for this explained earlier.
The problem is Tackle spends a lot of the day here waiting for me to remove Ruffles. She stays in broody mode essentially and what broody hens do normally when they get off the nest to eat, drink, bath is empty their bowls.
Under normal circumstances this entails one large very smelly dump and while they are off the nest, as many little squeezes as they can to ensure their bowls are empty when the return to sitting.
Tackle does her mega dump after Ruffles evicts her in the morning and hse is very good and does this outside. However, when she comes back into the house she spends the day making sure her bowls are empty in case she sits. The effect of this given she nips out for a snack or two is a constant stream of tiny poop piles and this goes on all day!
As soon as she gets back on the nest in the evening it stops.
My toilet roll consumption is going to require a bank loan to fund at this rate.:he

That great!
I'm also a little jealous that he and the Princess get to vacation so often. All I can manage under my current circumstances are Staycations where I work on some project that needs completing.

My gut tells me that your day will come. The Princess was 19 and I was 22 when we got married. I was making $4,800/year and she was making around $2,500. I started working at 12 and have always been a saver - the Gypsy Princess not so much. :lau Fast forward a year and a half, and we had one child and another on the way. She was a stay at home Mom - that's what we did back then. Put every penny possible into my company retirement plan (we used to have good ones back then) . The Princess made her own maternity clothes. No eating out at restaurants, paid cash for almost everything (I'm still guilty of that.) Put $15,000 down on a $21,500 home on 11.25 acres - I know that's an impossibility today - best investment ever. Princess 'created' a job in community government - became president of the state Municipal Clerks association and an officer of the International organization - She's pretty impressive = sure got lucky with that one. Put two kids through college - no debt - we paid 3/4 they were responsible for 1/4/. Both kids have great jobs (daughter just bought her own business ) so we are spending their inheritance.

It may have been easier when we started out. :idunno I know costs were less, but so were incomes. Bottom line is that for a long time we did like you. 'Vacation' might be a day trip to the shore or a local lake and a big meal at McDonald's. We've been lucky, and we know that. Had our children early, raised them up, educated them and sent them out into the world. Funny thing is that the early days were just as much fun as the present.

I hope that someday I will be able to vacation a bit more. Right now, we go somewhere within a 10 hour drive about every other year.
I'll be on my own by the time I can vacation more. Dave is 15.5 years older than me with a terminal illness. I do everything I can to prolong his cognitive function so that he can enjoy life, but the fact remains, his clock is ticking quite a bit louder than mine.
Last night, I was looking around for a house to rent in Chincoteague. I found some nice ones. They have to allow pets as we always take them. Ben goes to his buddy, Shadow's house but the littles come with us. If I can get my roof done, the mini-split and front walkway installed and my mom's house on the market, we'll go this year.
I am currently working for my retirement. I'm maxing out my 401(k) playing catch up. But I live rather simply as I much prefer it that way. My expenses are very low, my house is paid for. I have no debt. Dad taught me well.
