Spinach and Bacon Quiche

1 uncooked pie crust
1/2 onion chopped
6-10 eggs, depending on size (mine were on the smaller end)
1 cup milk
2 cups sharp cheddar shredded
1/4 cup sour cream
1/4 cup ricotta
3 handfuls of fresh baby spinach
1 package of bacon
1 T butter
2 T flour
salt/pepper to taste

Preheat oven to 450 degrees.

Cut bacon into bite sized pieces and cook until browned. Saute onions in butter and set aside to cool. Combine eggs, milk, salt/pepper, sour cream, and ricotta.  Toss cheddar, onions, and bacon in flour to coat lightly (this helps the ingredients suspend in the quiche). Add to egg mixture and combine. Toss in the baby spinach and combine.  Add to unbaked pie crust.  Bake for 10 minutes, just enough to brown crust.  Cover edges of crust with foil and reduce oven temperature to 375 degrees.  Bake for 40 minutes or until just set.  Let cool on baking rack for about 15 minutes before slicing. Serve and enjoy.

In the past 2 weeks we have had 3 ducks join in the egg laying. We now have 9 ducks a layin! While the chickens are slowing down, these ducks are just warming up lol! Between the 2-4 eggs we get almost a day now from the chickens- we are getting about a dozen eggs a day now. Not too shabby for 11 ducks and 11 pullets in the Fall eh? The Easter Eggers combs are getting darker especially one of them. I know that generally means getting closer to lay- but is that trickery since it's Fall and they are likely to not begin until Feb/March?

By the end of Monday I will be down 2 more roosters. Woot!
 
And I have to say I am loving these little pullet eggs. They are so small- like 40-50 grams each. Hardboiled they are the perfect sized little snack for me. Does anyone know how big bantam eggs are? I wouldn't mind trying to run down a few more bantam BLWs to add to our bantam collection. I cannot figure out though why my bantam hen has not yet resumed laying (unless she is and it is the same size as the pullet eggs. both lay a light brown egg so it might be hard to tell. never see her leaving the nest boxes though).

Anyone know someone who sells blue laced wyandotte bantams?

Isn't it so nice to be finally getting your own eggs? They taste way better than store bought and there's nothing better than a fresh egg..laided that morning for breakfast:)

If they haven't started laying, the pullets will probably wait to start until around Feb.. some may surprise you and start anyway though.

I'm thinning my flock too, hopefully I'll have 22 fewer birds by next week or so. 6 of which are cockerels. I had 13 roosters and juvenile cockerels that were crowing this morning! The juvenile cockerels sounded like a whole lot of cat's getting their tails stepped on. LOL. My new neighbors are moving in today...I don't think I've made a good first impression with all the noise coming from the roos, LOL

haha Roosters and their first crows are a hoot! I have 3 roosters now that argue crow. I'm biggerrrrrrrrrrrr, noooo I am biggerrrrrrrrrrrrrrrrrrr and in the end it's always the bantam rooster that wins. Ha!

It's so wonderful getting your own eggs and they really are delicious. I love both the duck and chicken eggs. The duck eggs for baking/cooking and for scrambled eggs. The chicken eggs for fried eggs and hardboiled eggs (the duck ones are yummy too but a lot bigger and sometimes too much for me with the sheer size). The ducks lay like leghorns. It's insane. In the past 6 weeks when 5 ducks were laying- we never got fewer than 4 eggs. When 6 began to lay we had ONE day where we got 4 eggs. The rest of the time we get nearly 1 egg a day for every duck that is laying. Regardless of their breed since I have 5 breeds currently.

I am excited to work with the Leghorns in the new year. :D

that must be so delightful! none of my pullets have started yet (the oldest being 26 weeks or so), and am thinking i will probably have to wait til the new year. in the meantime, they are earning their keep by eating thistle sprouts! and keeping the cats and me entertained.
 
Hello everyone, I hope you all had a great thanksgiving!
We got a surprise egg today! My f1 Olive Egger layed a surprisingly brown olive egg! I'm going to start my f2 project this week, useing her full brother and my Marans hens. I'll do a month or so of eggs then DH can live a life without Muffler ( he hates that roo, he really does)

I didn't think she was going to lay until next year, the egg was quite the surprise. My blue eggs always wash out on camera. and this olive egg seems to do the same. DH got a pic but its not really the right color.

Its kind of exciting, both the projects I started last year ( tuxedo quail, olive egger hens) have born fruit. Not complex ones by any means but still fun for a noob like myself.




Muffler, her brother whos a total ham and loves his picture taken ( if anyone is looking for a f1 roo, hes availible in jan)




Olive is in the middle surrounded by voratious Marans and an interpid Orphington.



Here is a bad pic of the egg, it looks just brown, but you can really see the blue shell in person. ( the box it is on is pink, that shows how bad my colors are)

My poor scalped hen is doing better. I'm debating putting is some young silkies in with her to give her some company. Ill see how she is doing in a few days, but now she is eating and drinking and her eye isn't swolen and she can see out of both, so im happy. Still don't know if it was a chicken attack, a turkey attack or some animal.

They are definitely entertaining. We are getting rid of satellite tv this week so I am truly excited to free up some time and spend more of it together with the kids and also with the animals. Saving $130 a month is a HUGE bonus too! We bought a Roku and we can access our Netflix and Hulu accounts through it. So I can still watch some of my favorite shows. Plus old ones- we are making our way through the Cosby Show as a family. My kids LOVE that show (we do too).

We love watching the roosters interact with the ladies. They really have so much character!
