Here is another great Lemon Recipe. You mix it and when it bakes, it separates into a curd layer and a spongy cake layer. It's delicious, super easy and not so hard on the waistline.

Lemon Pudding Cake

1/4 cup unsalted butter, melted
3 lemons
1 1/2 cups plain yogurt
1 1/4 cups sugar
3 large eggs
1/4 cup all purpose flour


Preheat oven to 325 degrees. Grease 1 quart casserole dish.

Using a grater, grate the zest of 1 lemon. In a food processor, mix the melted butter and the lemon zest until combined.

Squeeze the juice from 3 lemons and strain into the butter mixture. Add the yogurt, sugar, eggs and flour and process for 3 minutes.

Pour the batter into the greased casserole dish and bake for 50 minutes, or until lightly golden around the edges and springs back when touched. Cool slightly and serve warm.

And here is a really good lemon pound cake recipe - it freezes well, even with the glaze. It's a recipe I found and modified.

2 cups all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, at room temp
1 1/4 cups sugar
2 large eggs, at room temp
1/4 cup lemon juice
2 tsp grated lemon zest
1 (8 oz) container sour cream

Lemon Glaze
1/2 cup powdered sugar
1 1/2 tsp fresh lemon juice
1 to 2 tsp milk

Preheat oven to 350 degrees. Grease and flour a 9 X 5 loaf pan.

In a medium bowl, whisk together flour, baking powder, baking soda and salt. Set aside.

In a large bowl, beat the butter and sugar with a mixer until light and fluffy. Add the eggs one at a time, beating well after each addition. Beat in lemon juice and zest. On low speed, add the flour mixture, alternating with sour cream, beginning and ending with the flour mixture. Pour the batter into prepared pan and smooth top.

Bake for 50-55 minutes, until a toothpick comes out clean. Let cool in pan for 10 minutes, then remove from pan and let cool on rack.

Make the lemon glaze. Combine ingredients and beat until it's a smooth glaze.

Drizzle glaze slowly over the top of the cake. Let glaze set before serving. (or freezing in foil)

Darn, results came back from fecal sample. The girls have some round worms, first time in 4 years.

I'll be treating with piperizine, I know I can't eat the eggs, but will it effect eggs collected for hatching?

They only found 1 cocci in the large sample I sent in anyway. She was saying she usually sees alot more in local samples so I guess that's good.
 
Darn, results came back from fecal sample. The girls have some round worms, first time in 4 years.

I'll be treating with piperizine, I know I can't eat the eggs, but will it effect eggs collected for hatching?

They only found 1 cocci in the large sample I sent in anyway. She was saying she usually sees alot more in local samples so I guess that's good.

I don't hatch from eggs while worming. I just feel you never know how the chemicals will affect the offspring. I prefer to hatch strong offspring.

Most guides for breeding have worming at the top. I think it should say test for worms and treat if required!

Ah, so you got some! Yay!! Congratulations. I can't wait to see the chicks. How many eggs did you get?
