I hear you...I am a wanna be farmer! Other than culling for injuries, I still haven't processed one of my birds! I don't have it in me yet. If you keep 2 roos, you could split the girls up between them. And that is DEFINITELY the enabler in me talking!
I have said to DH that if we end up with a mean rooster...he'll end up in the soup pot. Knock on wood, they have all been gentle and awesome to have around.
I would keep 2...for now. That's my $.02 Also, all of my breeder roosters I have 2 of each. Everyone has advised me that I don't want to only have 1...something always happens to the last one, so it's best to have 2 of each. Let's just say we have a growing bachelor pad.

We're wanna be farmers too! My DH's plan all along has been to have laying and eating chickens but now he's talking about eating all the retired hens and I really don't have the heart for that!! Well, we were going to be ordering another batch of chicks in mid spring/early summer time so I could always order some extra girls for the other boy we're going to keep!! That's exciting because I wanted to get some Barred Rock chicks!!
