Keeping the interior of the coop (and bedding) bone dry and providing ample ventilation should keep the coop from smelling.

I've never sprayed anything inside my coop except for permethrin when I was treating an active mite infestation. All my cleaning is done dry, and I surface clean under the roost daily (poop boards would also be ideal) and otherwise full clean out litter 1-2x a year. If you really want to save on bedding costs a routine like that is much more efficient, though depending on actual size of coop vs number of birds cleaning frequency will vary.
