Please don’t assume that someone would break a picket line. Give us some credit.

People break picket lines all the time, unfortunately. I've seen it locally a LOT. Some people don't like strikes and unions at all. G called his dad in NY yesterday and was talking about it and his dads response was they shouldn't strike because it would be inconvenient to find somewhere else to shop and they shouldn't be paid more because they are replaceable and that he was going to shop there anyhow if it happened. I didn't address anyone specific, I was more just putting it out there. I'm sorry if you felt like it was directed at you in particular - it wasn't meant to be.

Out of curiosity do you/anyone you know work at your local TJs? You could check in and see how they're doing if it's someone you know and get a feeling for it from someone who's not on the clock. I know our local WF and Costco are doing really well with their responses from employees who we know outside of their work but there's some that are not. Like some WF employees are being asking to share PTO with other team members which is bollocks IMO. (Though the two week PTO for COVID related illness may have come through since then.)

Even if a company does well locally or nationally that doesn't mean we shouldn't stand up for workers if there's a problem somewhere.
 
I named my starter “Hooch.” Only sourdough people can understand why this is an appropriate name. LOL! If I neglect Hooch for a couple of weeks I add a little yeast when I feed him. It perks him up right away. Sourdough waffles are awesome. And sourdough bread is better for diabetics because it is low on the glycemic scale.

Yes, as you found out, it does not behave the same way and the things one needs to make a product with a good mouth feel is more complicated. Non-leavened items, like pie dough or even a quick and dirty cornbread are easier, but yeast items have even another set of rules and flour mixtures.
What I find annoying are the people who refrain from gluten as a “ lifestyle” choice. I have other food allergies and it is annoying when people who make those choices are insulting those who are really dealing with serious medical issues.

Yes then people put us all in the, just doing it as a fad, catagory.

Some people still don't realize some people have real problems with certain foods

You are starting to get a bit political. I hear you but I think this is not appropriate on this thread or this website. That said, making assumptions as to how people act in this regard and to think you know is presumptive. Please let this go.
