Oh that's good to know, thanks! I made a brownie recipe that relied on the moisture from the zucchini to bind everything together so I assumed this recipe worked similarly.

Oof, do you have a go-to recipe for fritters?
This was the recipe I used for the cookies: https://sallysbakingaddiction.com/zucchini-oatmeal-chocolate-chip-cookies/ I found that I needed to add an extra 1/4 cup of flour and you *really* need to blot the zucchini but your mileage may vary.

We are a gluten free family so I doubt you'd want ours, but when I googled it I found a bunch of fritter recipes online. I also know if youu use a recipe that calls for cornmeal or bread crumbs, they can taste almost (almost) like hush puppies. We like to call them zucchini pups.

I have found that if I let the zucchini sit on the counter for a week or so, they are less wet when you shred them. If I'm making brownies or cake where I want the moisture I grab fresh ones. If I want dryer ones for something else, I grab an older one. Mine tend to store well on the counter for up to a few weeks.

Thanks y'all for the zucchini recipes! @SnapdragonQ I totally understand - my family is a gluten-free household (my little brother and I escaped the Celiac gene but everyone else in our family has it ). I wanna try making kimchi next year with whatever vegetables I can get from the garden.

Lol...trust me, it tastes just like regular brownies or chocolate cake. The zucchini disappears.
Much like if you use applesauce in place of some of the butter or oil.

Yeah I agree!! I think maybe they’re just a kid? Idk. But some of their posts make me wonder haha
