Dried Prunes! (Prunes are a special type of plum that can handle dehydration better)
Prune Cake
2 Cups Flour
1 Cup sugar
2 Tbl Cocoa
1 tsp Salt
2 tsp Baking Soda
1 Tbl Corn Starch
2 Cups Prunes
1 Cup Prune Liquid
2 tsp Cinnamon
½ tsp nutmeg
¼ tsp cloves
½ cup Oil
Stew Prunes until soft. Finely chop prunes. Mix all ingredients in a mixing bowl. Bake in a 9X13 Baking pan.
Bake 25-35 minutes at 350°.
It is very good and freezes well for lunches. We put slices into zip lock bags and then take that with us as part of lunch at work.That sounds good. I'm going to give it a try.
