DH brought home "blood sausage"

My in-laws used to make blood boudin...and they'd just boil it....and eat it...if you decide to fry it...don't poke it...it'll release the blood and not have that taste...
 
LOL Mary you guys eat awesome stuff down there... I had alligator and puppy drum in NOLA last weekend. It was awesome~

Anyway, thanks for all your input. I'll let you know how it goes. I'm leaning toward the crispy way.
 
LOL Puppy Drum is white flakey fish found in the gulf I guess... its actually "Drum" and is red or black as I understand it. Puppy drums are small ones. Cho... what? Nope, but I probably would.

Hey, my mom used to save the blood when she butcherd our chickens, then fried it after it congealed. It looked like liver and I was always too mortified to eat it, but I'm sure I must have had some of it when she mixed it together with liver and onions. I can still see those pans of chicken blood,ugh!!
